Thisunit group includes various types of chefs who plan and direct food preparationand cooking activities and who prepare and cook meals and specialty foods. Theyare employed in restaurants, hotels, hospitals and other health careinstitutions, central food commissaries, clubs and similar establishments, andon ships.

 

 

主要岗位职责-Mainduties-新新源移民

(1)执行主厨

--规划和管理在餐厅、医院和其他食物供应单位的食物准备及烹饪活动;

--就婚礼、宴会和其他特殊餐饮,和客户交换意见;

--规划菜单,确保食物满足质量标准;

--预估食物要求,以及食物材料和劳动力成本;

--可能规划菜单和采购食材和厨具;

Executive chefs perform some or all of the following duties:

Planand direct food preparation and cooking activities of several restaurants in anestablishment, restaurant chains, hospitals or other establishments with foodservices

Consultwith clients regarding weddings, banquets and specialty functions

Planmenus and ensure food meets quality standards

Estimatefood requirements and may estimate food and labour costs

Superviseactivities of sous-chefs, specialist chefs, chefs and cooks

Arrangefor equipment purchases and repairs

Recruitand hire staff

Mayprepare and cook food on a regular basis, or for special guests or functions.


Sous-chefs perform some or all of the following duties:

Superviseactivities of specialist chefs, chefs, cooks and other kitchen workers

Demonstratenew cooking techniques and new equipment to cooking staff

Mayplan menus and requisition food and kitchen supplies

Mayprepare and cook meals or specialty foods.


Chefs and specialist chefs perform some or all of the following duties:

Prepareand cook complete meals or specialty foods, such as pastries, sauces, soups,salads, vegetables and meat, poultry and fish dishes, and create decorative fooddisplays for special events such as banquets

Instructcooks in preparation, cooking, garnishing and presentation of food

Createnew recipes

Supervisecooks and other kitchen staff

Mayplan menus

Mayrequisition food and kitchen supplies.

Completionof secondary school is usually required.

Cook'strade certification, which is available in all provinces and territories, orequivalent credentials, training and experience, are required.

Executivechefs usually require management training and several years of experience incommercial food preparation, including two years in a supervisory capacity
and
Experience as a sous-chef, specialist chef or chef.

Sous-chefs,specialist chefs and chefs usually require several years of experience incommercial food preparation.

RedSeal endorsement for cooks is also available to qualified chefs upon successfulcompletion of the interprovincial Red Seal examination.

Chefde cuisine certification, administered by the Canadian Culinary Institute ofthe Canadian Federation of Chefs and Cooks (CFCC), is available to qualifiedchefs.

Additionalinformation

TheRed Seal endorsement allows for interprovincial mobility.

Thereis some mobility among the various types of chefs in this unit group.

Executivechefs may progress to managerial positions in food preparation establishments.
